A Process Rooted in Tradition



Wild Ones Mezcal is made the way it has always been—by hand, in small batches, using techniques that refuse to be rushed. It all begins with wild agaves, some of which take decades to mature. These aren’t farmed, forced, or manipulated; they grow where the land wills them to, absorbing the minerals, climate, and history of their surroundings.



Once harvested, the piñas—the heart of the agave—are slow-roasted for days in underground earthen pits, fueled by wood and volcanic stone. This ancient roasting method imparts the deep, smoky complexity that defines true mezcal. After roasting, the softened piñas are crushed by a massive stone tahona, pulled by hand or by horse, extracting every last drop of rich, caramelized nectar.



Fermentation: The Wild Factor



Unlike industrial spirits, Wild Ones Mezcal relies on open-air fermentation. Natural yeasts from the surrounding environment work their magic, slowly transforming the agave juice into something extraordinary. Wooden vats, clay pots, or hide-covered fermentation tanks—all methods steeped in tradition—allow the process to unfold organically, capturing the terroir in a way no commercial operation ever could.

Distillation happens in small copper or clay pot stills, ensuring that every batch is crafted with precision.
